Ingredients: 
1 large carrot
1 large onion
2 cloves garlic
2 heads of greens
100g ground almonds
100g breadcrumbs
1tbsp flour
1tsp dried mixed herbs
1tbsp sundried tomato puree
Olive oil, for frying
Method: 

  • Finely chop the onion and garlic and saute in olive oil for 5 minutes
  • Finely chop the greens and grate the carrot – add to the pan with the herbs and saute gently until soft
  • Add the ground almonds, flour, tomato paste and half the breadcrumbs and season well with salt and black pepper
  • Form into 4 burgers and coat with the remaining breadcrumbs
  • Put some olive oil in a frying pan and cook for a few minutes on each side until golden
