Image of Celeriac, butter bean and leek burgers

Ingredients: 
1/2 celeriac root
2 cloves garlic
1 leek
1tbsp sunflower/rapeseed oil
1 can butter beans
50g wholemeal breadcrumbs
2tbs parsley
2tbs horseradish (or to taste)

Method: 

  • Finely slice the leek and sauté for 5 minutes
  • Chop the garlic and stir it into the leeks
  • Peel and grate the celeriac and add to the pan – sauté for another 5 minutes until soft
  • Drain the butter beans and mash
  • Finley chop the parsley
  • Combine the leek and celeriac with the beans, parsley, horseradish and breadcrumbs and season well
  • Chill in the fridge for an hour before frying
