Image of Spicy beetroot and sweet potato

Ingredients: 
1 large sweet potato
1 large onion
2 beetroot
2cm piece of ginger
3 garlic cloves
1 green chilli
1tsp ground coriander
1tsp paprika
1/2tsp turmeric
1tsp garam masala
1/2tsp cinnamon
Lemon juice
Method: 

  • Peel and finely chop the garlic and ginger
  • De-seed and finely chop the chilli
  • Dice the beetroot and sweet potato
  • Slice the onion and fry in 1tbsp of sunflower for 5 minutes then add the ginger, chilli and garlic. Fry for another couple of minutes
  • Add the sweet potato and beetroot with the spices and stir over the heat
  • Add enough water to cover the vegetables and simmer for 20 minutes
  • Add 2tsp of lemon juice and season before serving
